-When a person leaves U.S., he/she has no non-immigration status (the status is only for a person living in U.S.). But when he/she enters U.S. with a visa, he can get/re-instate a non-immigration status again. So, you can work in China without a problem and you can come back to U.S. later with an H1 visa to re-instate your H1 status if your caompany sponsors you. Also, you can use AP to come back and work with EAD with AOS status.
-The problem is that if you work in China for a longer period of time (e.g. one year), USCIS may consider that you have no intent to live U.S. permanently and thus, they may deny your i-485. So, you may change your I-485 to Consulate processing to get your green card in China if you plan to work in china for longer period of time.
