metering mode that suits the scene. If unsure, use either matrix or center weighed. Use spot meter(or for your Canon, partial metering) for things you want to highlight in complicated lighting (it often overexposes the rest of the photo though).
Handheld is not the best approach for night photography, no matter what IS or VR lenses you use. Get a remote shutter release and a tripod.
