Assuming you are talking about alpine skiing (versus X-country), chances are you have to fly somewhere to ski anyways, being where you are.
- Many "neighborhood" skiing resorts only have a couple of bunny runs which you get bored of pretty quickly. You don't get to go up high to see much of the scenery, if any.
-High end resorts - Whistler, many Colorado resorts, Heavenly and Sqaw Valley in Tahoe offer much better scenery even for beginners. Many of these resorts have gondolas that even non-skiiers can ride up for sight-seeing. Whistler, for example, offers quite a few restaurants and coffee shops near the top of the mountains. And they also have outdoor BBQs right next to ski runs (you don't have to ski to it). And on a sunny day, there is nothing like fresh air mixed in with new snow scent and the occasional BBQ smell and the scenery is breathtaking! I can easily see a non-skier going up to Roundhouse in Whistler, sitting next to the fireplace and enjoying the views and the hustle and bustle of a world class ski resort. The Heavenly (Tahoe) gondola, for example, takes you up to a breathtaking view of the sky blue Lake Tahoe with a white ring of snow-capped peaks in winter. Squaw Valley (Tahoe) has a skating rink and a bumgee jump on top of the mountain.
- High end resorts also offer more options for skiing lessons and better instructors. Almost all skiing resorts have beginner packages that include equipment rentals, a lesson, and lift tickets for beginners. The lift tickets in these beginners' package usually limit you to beginner runs. At smaller resorts where neighborhood kids learn to ski, that usually means 1 or 2 runs. At high end, resorts, the options of ski runs can be endless.
- On non-skiing days, high end skiing resorts offer much much more options of other activities, shops, restaurants, etc. Many skiing resort towns, such as Whistler BC and Vail, Breckenridge, Crest Butte (Colorado), have that mountain village or old mining town feel and the town is worth a tour of its own. The lower end skiing resorts are often times dead towns at the end of the day. Tahoe area resorts, for example, offer many casinos to keep you entertained.
- I do not recommend booking multi-day skiing lift package for never-evers (although you may have to since you have to most likely fly to a ski resort). You have to be physically fit for skiing and not very many people I know of (skiers or non-skiers) are fit enough to ski more than 3 days in a row. I remember when I first learned skiing back in 94, after 3 days of struggling, every single muscle was screaming back at me and I could barely lift chopsticks! When you need to take a break from skiing, it would be nice to have all these other activities a neat skiing resort offers and "neighborhood" mom & dad skiing runs lack. In addition, as a beginner, in case you find out you don't enjoy skiing, you have more other things to do in a high end skiing resort. And many beginners I know do hang up their rented skis for the rest of their life after 1 try (I almost did). And that brings up my next point.
- This one would be hard to do for you being in Florida. I recommend beginning skiiers ski at least once a week while learning and give it at least 3 days of trying before giving it up. Skiing is a difficult sport for many people to get into. If you only try it once/day, what you get are all the beginning miseries that come with learning to ski. I also personally recommend going up a lift chair on the first day or as soon as you feel comfortable with falling and stopping the correct way. The earlier you get on a lift, the more likely you get to enjoy skiing.

So the bottom line, I personally recommend picking a 很牛的skiing resort for your first time and preferrably a place easy to get to and close to many other options (in case you don't enjoy skiing or need to take a break from skiing). Easy to get to means, close to a major airline hub (for cheap fare and fewer connections), and easy to drive to, especially if you are uncomfortable driving on snowy icy roads.
