If you must go in Jan, be prepared to pay high price for lodging of any kind.
The high season of Hawaii started from Mid Nov to Mid April, with the most expensive periods between Dec and March.
For your elderly parents, Maui may be a better choice because the main attraction of Big Island is the Volcano NP, versus Maui has several areas with stretches of beaches that your parents can take a very leisurely stroll and would not feel tired. Even at the top of Haleakala NP, they dont need to walk too much to get great views.
Some hotels have good 2 good size beds that 4 of you can sleep in one room, but the remaining space would be very tight for 4 adults.
Choose hotels that are several blocks away from Waikiki beach, that would be much more reasonably priced, though I am afraid in January you will have to really pay up no matter where you look.
In Maui you can rent condo from owners but if your stay is shorter than 7 days, be prepared to pay "cleaning fee" of about $75 to $125 - that is the fee the owner would pay the management company to clean the unit after each rental and usually it is absorbed by the owner if the renter rent it for 7 days or longer. January is PRIME TIME in Maui, for Whale watching, so you are looking at $150 a night for a condo unit as a bargain for a one bedroom unit - usually has a Queen size bed in the bedroom and a sleeper sofa in the living room.
