same situation as mine

I had exactly same situation as yours. I have spent some time studying this situation and consulted several professionals regarding that. Here is my understanding:
1. If you don't use AP, you are F1/AOS at the same time. Your 485 pending doesn't invalidate your F1 status. You don't need to use your EAD to work as RA or TA since you have working permission from your F1 staus. My school ISSS confirmed that.
2. If you use AP, you lost your F1 and become AOS only. Once you enter US, you have to contact your human resource department and change your I-9 form based on your EAD. I have done that.
3. Someone even said that I can still work with my I-20 (without EAD) after I come back with AP. It might be true if no one catch me. But I don't want to take any risk. I don't want to be in any grey area if I can avoid that. Therefore, I told ISSS and changed my I-9 information.
4. For your wife, she will also lose her F2.
