Actually, you can file I-485 for you and your family to Guangzhou consulate to get immigration visa. This is the quickest way to get green card. But you have to go to Guangzhou to interview. Some of my friends got their greed card in couple of months after they file I-486 to the US consulate in their countries.
I don't think your wife can file I-485 for her alone since you are primary applicant.
