A Witness means he/she has to see with his/her own eyes that the will is signed. 

So, strictly speaking, not only the witness has to sign the will on the same day, they should also be present at the signing of the will.

However, different jurisdiction has different rules relaxing such requirement.  Without knowing your state law, I cannot advise.
