海尾归私房拜年 年夜饭片片

除夕忙完啦.

先是拟了菜单,要是不做出来,私房朋友们要失望啦.这不,一有了片片就来上贴了.同时拜年:

新年快乐!恭喜发财!大吉大利!心想事成!

冷盆：

    手撕扒鸡-

安徽符离集烧鸡做法,先抹蜜糖风干后油炸,黄了后下卤汤小火4小时即成.(流程还在整理)

    卤味拼盘-

卤鸡翅, 卤鸡珍, 卤鸡肝, 卤豆腐干, 卤香菇

(同以上老卤汤中卤1小时)

    凉拌罗卜丝

热菜：

    马来西亚沙茶茄子,

(马来沙茶酱花生酱汁,烩油炸茄子)

    徽式红烧扒皮鱼

(鲜扒皮鱼洗净抹干,码上盐和料酒入冰箱过夜.后油炸黄了,用普通的红烧做法,蒜子,葱姜料酒红糖)

    腐皮白菜芯

(豆腐皮和菜心,蒜蓉爆炒,高汤勾欠)

    地瓜排骨煲

(广式火煲做法, 地瓜排骨油炸沥干,葱姜豪油,入瓦煲)

点心：

    家制八宝饭-

糯米,红枣,核桃,葡萄干,松子,红莓,甜桔酱

取其色红,和(核)气,吉(桔)利,多子(籽)之意.

汤：

    团团圆圆(双烩圆子)

糯米(黑白)饭,揣过,加火腿香肠五香粉,捏成圆子,油炸出来.冷过夜.高汤下去,煮软,勾藕粉欠.
