牙买加香辣烤鸡 - Jamaican jerk chicken

吃过同事potluck带来的这道牙买加菜, 好吃的做鸡的方法我是不会放过的, 问了做法, 又上网研究一下, 做完带去给大家鉴定后, 绝对到味和好吃, 爱吃辣的两个同事还说 ”so good, so addictive!”, 我儿子还说可以再辣点, 称好汉哈.

味道真的很丰富, 不是单纯的辣, 辣得香醇, 浓郁, 这种”哈苯呐罗”辣椒 (我瞎翻译的)本身有点奶油香, 但 千万要量力而行, 不要用裸手去切它, 后果不堪设想.


腌酱:

1个洋葱, onion
2个红葱头, shallot,
2 个 ”哈苯呐罗”辣椒，Scotch Bonnet/habanero pepper,
6-7瓣大蒜，
1大匙，五香粉, five-spice powder
1大匙，”多香果粉”，ground all spice berry
1大匙胡椒粉, black pepper
1大匙干百里香，thyme
1茶匙肉豆蔻粉, ground nutmeg
2大匙红糖
2茶匙盐
半杯酱油
2大匙植物油
2大匙白葡萄醋, white balsamic vinegar
1 TB 老抽, dark soy sauce, 上色用
6磅鸡腿


粘酱:

1杯留出的腌酱
1杯ketchup, 番茄酱,
1个青柠的汁,


做法:

在food processor里, 把洋葱，红葱头, 辣椒，蒜，五香粉，多香粉，胡椒粉，百里香，肉豆蔻, 糖 和 盐 打成糊, 加入酱油, 醋 和油, 留1杯做粘酱用。

倒入一个大的盆, 放入鸡肉，盖好, 冷藏过夜。

烤前，把鸡肉放到回室温。 烤箱预热400F, 鸡腿放在有烤架的烤盘上, 烤25分钟, 翻面, 再烤约25分钟, 烤到充分焦黄和熟透，取出烤箱享用.

冷吃也很棒, 带去爬梯只放一支辣椒就好了.

今天去把几把常用的刀去磨了一下, 趁机给我的刀拍个集体照,

 有一套 Henkels 双人刀, 用得最多的是 Santoku, bread knife and paring knife, 偶尔会用meat cleaver 剁鸡和鸭, 小排骨(要侧剁),

 认真做饭的时候就用 Shun chef knife, 感觉很凶险,

旬的中式大菜刀很快, 是其它中式菜刀都不及的, 轻重,手感都很适当, 只是觉得人要站高点, 手是向下压才轻松, 不然有点累.


就新进了一把 Shun Nakiri, 跟 Santoku 类似, 但是平切的, 象中式刀, 用起来很轻巧, 非常快,很适合女生们用,
