家常小烹：美味燕皮，牛奶新吃，打卤面

上几个自家玩玩的汤汤水水。这不是一般的馄饨，是燕皮馄饨，皮子是用肉加粉砸成很薄的皮子，晾干的。薄的象纸似，用时打湿了，就变成透明样，包上馅子。这皮子是俺家太爷这次去福州时特意买的，燕皮乃福建传统名吃，但制作繁琐，现在在福州都不大好买呢，出了福州就更是遍寻不着了。俺的馅子是鱼蓉，虾蓉，蟹肉。汤头是冬瓜鸡汤，鲜得一塌糊涂。

咬一口，看看里面。这皮子是肉浆做成的，经水一煮，晶莹通透，但却很经泡的，剩过了夜的都不会泡烂，依然柔韧鲜美。

牛奶魔术似的姜撞奶，温温的奶香伴了老姜的微辣，非常养胃美味，嫩滑如奶豆腐似的口感，实在是美味：

其实制作非常简单，就是挤这样一点姜汁，把加热后，放至温热，加过糖的牛奶倒下去，牛奶就奇迹般的结成奶冻了。倒是要撞下去，不要搅动。俺用的是2%fat的牛奶。

这个是双皮奶，牛奶蛋清糖蒸的。俺那层奶皮很少，因为不是全脂奶：
