《宝煲家常》猪手炖木瓜、麻辣牛腱

猪手炖木瓜：








小木瓜几个，猪手3磅、盐、葱姜、料酒，猪手切段过水、木瓜去皮去籽，先将猪手入汤锅中加姜葱炖熟汤浓，出锅前加盐与木瓜再煮10分钟即成，







麻辣牛腱；









牛腱一只，先过水再用老卤卤至1小时，离火焖半小时，捞出待凉切片，加入自制辣油、葱丝、香菜、蒜泥、香醋拌匀即成



辣油制作：



原料；清油，干辣椒，辣椒碎，花椒，沙姜，香叶，草果，八角，桂皮，丁香，蒜籽，葱头…先将干椒倒入4：1的油水中，熬至水干，油无水泡，倒入香料再熬至葱头变色，关火倒入花椒，[花椒放早会有苦焦味]辣椒碎，芝麻，泡几小时过滤即成
