花椒和盐一起炒,抄到盐稍微有点发黄的时候立刻关火,关火后盐会更黄。把盐抹在肉上,抹到最后有盐粒在肉上。把肉放在盘子里,不盖保鲜膜,放入冰箱冷藏室,开始几天会出水,记得每天把水倒掉,补点盐。3个星期后咸肉就做好了。这是放入塑料袋冷藏室保存就可以了。
