菠萝在闽南,台湾方言叫旺来,新年做这蛋糕很受欢迎。最好是用新鲜菠萝做,实在没有可以用菠萝罐头做。新鲜菠萝选用成熟有香味。如果买来的菠萝还不够成熟,可以放在有阳光的窗台放几天便会变黄并产生应有的香味。不要买完全是绿色的菠萝,这样的菠萝不会变熟。
很多版本会加樱桃蜜饯,除了视觉效果,味道和菠萝不搭。加些椰丝或杏仁粉倒是不错的选择。用量可以从面粉中扣除。下面是基本版。

- 6 slices fresh/canned pineapple in juice (plus 3 tablespoons of rum)
- ? cup all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- 1 stick soft butter
- ½ cup superfine sugar
- 2 large eggs
- Preheat the oven to 200°C/180°C Fan/gas mark 6/400ºF.
Bake for 30 minutes, then ease a spatula around the edge of the tin, place a plate on top and turn it upside-down.
