RE: Regrout

I am trying to regrout my bathtub.  Thanks in advance for your suggestions regarding my questions.

I have watched some Youtube videos (Thanks to 柠檬椰子汁).  From everything I have done so far, I realize one has to do the things to understand how to work on a project.  Different questions will come up that you cannot find answers easily, and that gets better with experience.

1. When I take out the old grout, do I have to do it until the space looks hollow?  My grout is white, so after I scratch the cracked part out, some spaces will have a smooth white layer underneath.  Should this layer be kept?

2. There are 3 tiles walls surrounding the bathtub.  Can I fill in the grout one section a day?  For example, I do 1/9 of the whole 3 walls today, and then move to another 1/9 section tomorrow.  I am getting a tube of pre-mixed grout, so it won't dry.
