摧荐一款晚餐面包:Parker House Roll(面包机版:)

1。Parker House Rolls
这个配方我最初是从亚虎新闻上看到的, 不需要面包机,做起来比较麻烦。自从买面包机后,就一直想用面包机试试看,发现不但更简单,效果也还不错。

用料:
1:鸡蛋1只,牛奶1杯,白糖3大勺,盐3/4茶勺
2:中筋面粉或面包面粉3杯
3:快速发酵粉1.5茶勺
4:半根(4TBS)无盐黄油,微波炉低温溶化。另外3到4大勺黄油用于涂抹烤盘和面包卷的里面和外面
用具:12*10烤盘

做法:
1)按顺序把1,2, 3放进面包机,启动揉面档,在面团刚刚形成时,打开盖子,加入溶化的黄油,继续揉面。
2)面团发好后,拿出来稍折叠后,分成2份。每份用手或擀面棍弄成8inch*12inch长方形(图1)
     每个长方形上刷黄油,纵向切成2片, 每片用刀背在稍偏中线处按压后,折叠成长条。每个长条再切4段。
3)每小段整理成想要的形状后,放到涂抹黄油的烤盘里。 烤盘上盖保鲜膜,放温暖地方发面20分钟左右(图2)
6)发好的面团上刷黄油, 预热350F的烤箱,20分钟。烤好拿出来后再刷剩余的黄油(图3)

 


 

网上的原配方(ZT):

Ingredients (Yield: About 36 rolls): 
6 cups all-purpose flour(about)   
6 table spoons sugar  
2 teaspoons salt  
2 packages active dry yeast  
2 sticks (1 cup) butter, melted
2 eggs 
1 ½ cup warm milk

Add 2 packages yeast to ¼ cup warm milk, set aside for 5 minutes
In a large bowl, combine 1 stick (½ cup) melted butter, 6 tablespoon sugar, 2 teaspoon salt, 1 ¼ cup warm milk, and 2 slightly beaten eggs.
Add yeast to the large bowl, stir in 6 cups flour one cup at a time.
Turn dough onto lightly floured surface and knead until smooth and elastic, about 10 minutes, working in more flour (about ¼ - ½ ) while kneading. Shape dough into a ball and place in butter greased large bowl, turning over so that top of dough is greased.
Cover the dough; let rise in warm place (80 to 85 degrees F.) until doubled, about 1 1/2 hours. (Dough is doubled when 2 fingers pressed into dough leave a dent.)
Punch down dough by pushing down the center or dough with fist, then pushing edges of dough into center. Turn dough onto lightly floured surface; knead lightly to make smooth ball, cut the dough in half, cover them with the bowl for 15 minutes, and let dough rest.
In 17 1/4-inch by 11 1/2-inch roasting pan, over low heat, melt remaining butter; grease bottom of the pan.
On lightly floured surface with floured rolling pin, roll each dough into square of 12 inches, cut it into 6 stripes, cut each stripe into 3 to make a 3*2 small rectangles. Brush the surface with melted butter. Run a knife back slightly off the center of each small rectangle. Arrange folded dough in row in pan, each nearly touching the other. Cover pan with plastic food wrap. Let dough rise in warm place until doubled, about 20 minutes.
Preheat oven to 375F.
Bake rolls for 20-25minutes until browned. Brush the top roll with melted butter again.
