Today, I read the top article posted by Mao-Mao Mom that one of dishes is Tofu mixing with beef(?), which raises my deep concerns although as everyone here I really like her posts that have great impacts on the people often reading and discussing on this forum. The problem is if the traditional Chinese food "Tofu" containing gypsum (CaSO4) is healthy to eat. The following post is posted again for your referring.
Is gypsum-bearing Tofu healthy to eat?
Just read an article on this forum about Tofu,that raises my concerns whether tofu is healthy or not depending on the consolidated gradients used for production of tofu.
I recall that there was a post here 8 years ago discussing that Tofu is not a healthy food for human being in particular for male, because Tofu contains a significant amount of gypsum. The stomach systems cannot digest gypsum, so that calcium in Tofu (mostly in gypsum) cannot be absorbed as a nutrition element by human beings. The harmful effect is that the very fine crystals (<200 mesh) of gypsum can significantly absorb calcium ion in stomach fluids and thus deplete calcium in the human system, resulting in calcium deficiency.
Please recognize this fact, and do not fool people to suggest them to take Tofu as a source to supplement calcium!!! If possible, read the labels carefully to see if it contains gypsum. If yes, simply do not buy it. The other consolidated gradients may be Ok, which also need to be researched. Japanese firstly found that gypsum cannot be digested by stomach acid. That is why Japanese produce Tofu without using gypsum.
I hope that Tofu producers in China and other countries will ban gypsum as a food additive in manufacturing Tofo so that Chinese people and others would benefit this type of Tofu free any gypsum, and enjoy the taste of Tofu without worrying about the hazard material.
Because of Chinese people are used to consuming Tofu for over many generations, the bone size of Chinese is relatively small compared to the westerners. Most adult Chinese people only have 28 teeth. The normal number should be 32. The reason is that Chinese people have eaten Tofu containing gypsum for nearly 800 years. (Tofu was invented in Southern Song Dynasty by whom I forget). When you do chemical measurement of Tofu, you can see that it contains high content of Calcium because it is hosted in gypsum. So people think that they can have adequate calcium given keeping eating Tofu. However, they do not know that calcium in gypsum cannot be absorbed by your systems, but the small gypsum crystals do absorb calcium ions in the stomach fluids that are derived from other food you have taken, and get rid of your systems via urine and excrement. The consequence is that these people who often eat tofu containing gypsum are lacking calcium, resulting in that the bone size and quality are small and poor,and sadly the number of teeth of most Chinese adults is only 28.
If you read old Chinese novels, you may notice that the ancient Chinese people were higher and stronger, such as Li Kui, Wu Song. Why? These people did not eat Tofu containing gypsum. Since South Song Dynasty when Tofu was invented and was becoming popular in China, Chinese people have become smaller and smaller in height and bone size. The number of teeth of most Chinese adults is only 28, while the normal number of adults should be 32. The reason is to blame the food Tofu they like to eat, leading to deficiency in calcium and thus smaller in size compared to our ancestors and the westerners.
I strongly recommend the Chinese Health Ministry ban gypsum as food additive in producing Tofu. The people like us should carefully read food labels when buying Tofu. If it contains gypsum, simply avoid buying it. Your kids would benefit this practice in your daily life.
I do not oppose that people contiue consuming Tofu, but make sure that it does not contain harmful gypsum.
