老姜记 – 某一顿晚饭

清蒸螃蟹

以前介绍过，常见的blue Crab，可以直接放锅里，不加水地蒸。 但大螃蟹，就不能这么干，否则锅底烧穿了，螃蟹还不熟。

当然也不复杂，用刷子把缝隙刷洗干净，背朝下放入蒸笼或者蒸锅，水开后上锅大火蒸， 两磅以下的蒸10-12分钟，超过的每磅加3分钟。关火后，不要打开锅盖，利用蒸汽的余温再虚蒸5-10分钟。

 

切姜丝，加醋, 少许糖和料酒，浸泡做成姜汁醋。加少许凉白开兑淡，以免咸味过重遮盖螃蟹的鲜味。

搬家后的第一顿晚餐，朋友送了只大螃蟹，5磅多，肉质雪白鲜嫩，蟹黄蟹膏更是绝顶美味，鲜的舌头打颤。
