One secret to make cold noodles taste good

It has to be quite sweet. Nothing else stand out in a bowl of cold noodles but sweet flavor.
I tried spicy, salty, sour, etc.. Only a large portion of Hoisin sauce propels me to eat up
a huge bowl of soba noodles.
It just doesn't taste right without the sweetness.
Soba noodles are very good for making cold noodles. But it has to be washed and rinsed several 
times to get ride of the starch. The same for rice noodles.
