-I do not think the IO so stupid to care about that two day difference (no one can remember so exactly correct and the error is acceptable). Also the date on LCA does not mean you have to work until that day because you may leave/resign/laid off before that day. For example, you have 3 year LCA/H1, but you may leave the employer and do the H1 transfer before the h1 expires and thus, you can not count that you have worked for that employer for 3 years (have 3 year working experience with that employer).
