job before 485 is approved. In case there is no RFE and a straight approval you will be fine. If there is RFE for employment letter, you need someone to draft a letter stating that you used AC21 to start a new employment. AC21 does not requires the continuity of employment. Time of leaving job is not an issue either. As long as 485 is pending 180 days, and you have new job offer at the time of approval, you will be fine. Short time unemployment is definitely not a problem. But long time unemployment may have some adverse effect.
