It uses infrared light heats the air to the preset temperature.  The fan blows the hot air evenly to all sides of the food for efficient cooking.  I had one for more than 2 years now.  I made a number of "Peking ducks" and many other dishes in it.  It can be bought at many stores now.  The lowest price is $40.  The one shown seems to have program controls for cooking different dishes.  The $40 ones needs some experience to set the cooking temperatures and times for different food.
