Sorry to tell you that there is not much to do in Atlantic City during winter months other than casinos. I've been there couple of times during winter months myself, and once is on Thanksgiving weekend too. To be honest, it is kind of 'dead' there. Very cold too since the wind from the ocean was very strong during the day. Even casinos don't have a whole lot of people like Vegas does. Most of the people there during Thanksgiving were older folks.
So if you are going anyways, just don't plan on having much else to do other than gambling. Gambling is still fun and you can find cheaper slot machines, but more expensive on the table games (impossible to find $5 or $10 tables).
I recommend the Tropicana hotel and casino if they have reasonable deals. They built a new quarter last year and it is quite nice. It has some stores and nice restaurants to hang-out at, that could be something you can do other than gambling. But sorry, don't remember seeing any kids focused activites though.
