Schengen visa application in Italian consulate

I am planing to visit Italy around Thanksgiving. I need a Schengen visa from San Francisco consulate. The list on their website require tons of stuff including ticket reservation and proof of lodging. Can I just bring an itinerary of flights instead of a confirmed ticket? For the hotels, I think I can book and then cancel later if the visa is not approved. Anybody has the experience? And they also require to apply at least 30 days before the departure date,
