榨菜肉絲米粉

材料: 豬肉切絲 榨菜切絲 米粉 上湯 豆粉水
醃料: 鹽 生抽 胡椒粉 豆粉 油
米粉用开水煮, 泡在冷水中,滤干.豬肉用醃料好,熱鑊下油炒香豬肉,下榨菜同炒至熟,下豆粉水調味.把上湯煮滾下粉煮熟,撈到碗里,加上煮熟的肉絲在上粉上即成.

柴鱼花浸渍茄子

材料:
中等茄子4根,柴鱼花少许。

调味料:
昆布つゆ(是荞麦面,乌东面的浸渍汁)


做法:
1.茄子纵切0.5mm的长片,加一勺盐抓一下,放置30分钟(如图1)
2.30分钟后,会有很多水盐渍出来,尽量把水分挤干(如图2)--这个时候茄子已经软软的了~~
3.平底锅里放一小勺油,或者不放,把茄子片平铺,烤到表面有些金黄(如图3)--放油和不放油,我两种都试过。这里放油的口感会比较润泽一些,不放油更加清爽,看你的喜欢,所以说是几乎不放油,呵呵。
4.昆布つゆ加冷水,大概1:2的比例,然后把烤好的茄子片放入,浸渍30分钟(如图4)
5.拿出后可以直接吃,也可以做个漂亮的小造型。把茄片排列在碗底,中间也塞实,然后倒扣在盘子里就可以了(如图5,6),最后撒上柴鱼片就可以啦^_^

烤鳗蒸豆腐

烤鳗(日本超市里都有卖哈)
豆腐(木棉,老一些的)一块300g左右
葱花一撮。

做法:
1.把豆腐的水分挤干,(尽量挤的干一些),然后加葱花,1小勺盐,2勺淀粉 ,搅拌均匀。
2.把搅拌均匀的豆腐泥整成和鳗鱼差不多宽度方形 --这里用整形的工具更漂亮,没有的也可以象我这样有手大致捏一下...
3.然后切下一块差不多大小的鳗鱼,铺在豆腐上 ,放到锅子里,小火蒸15分钟 。
4.蒸好以后把多余的汁倒了,然后浇上附赠的调味汁,撒上葱花就可以了
