中国鱼里，小时候能偶尔吃到的美味鱼

黄骨鱼--看起来象catfish。最大见到的不到一斤。没小刺，作汤非常鲜美。
 
塘鳢鱼--我们本地有叫傻瓜鱼，原因是它们不怎么动，浑水里一脚踩上了也不怎么挣扎。没小刺。大的也没见到一斤以上的。

黑鱼--凶猛鱼类，头大，但肉质鲜美。没小刺
 
翘嘴鱼--也是细嫩鲜美，但有小刺。记得结婚后第一次在农贸市场看见，马上买了条一斤多的回家。太太没见过，地一次吃就说太好吃了，以前都不知道呢。
 
桂鱼--就是鳜鱼。以前野生的不少。现在只有塘养的了。


 
美国淡水鱼吃得多，每年总能钓上两百斤左右和朋友分享。目前吃下来，还是Walleye，crappie最好。Bass，无论stripped还是large mouth肉都比较粗，每试过small-mouth。冷水鱼在中国没吃过。这边倒是经常吃trout和salmon。前者清蒸还是不错的。后者还真没有太多的好的烹调方法，就smoked经常用作sushi；偶尔也来个大块煎，当牛排吃。冷水鱼大多是不饱和脂肪酸，对健康倒是不错。
