911 for canada interview

I graduated last year in May 2002. I recently received a letter
from Canadian immigration. They requested that I list my
personal history (what have I been doing since May 2002). I used my
practical visa and student status has expired. Since last year I have
been
working as a waiter. I do not know if I should tell them the truth or
not.
This restaurant pays me, but I never pay tax in USA. According to my
application (business field) What should I do ?
Please give me some advice. I really appreciate any advice.
