I misunderstood your question and thought you changed position in the same employer. If you change employer within I-485 pending < 180 days, you may have some risk. If you get the RFE for your employment status during this period of time, your I-485 may be denied unless your old employer (I-140 sponsor) agrees to give you a letter to indicate they will hire you back to work after you get the green card. Of course, if you do not get the RFE within 180 days, you will be safe as long as the new job is in the same/similar area.
