It's admirable but if you don't want to go through all that and you happen to live in an area, e.g., SF Bay,
where bakers can enjoy rockstar status, you are in luck. Go to explore what they have to offer.

With my flour, so far, I've only made paratha (see a post by 盈_盈 from 私房小菜) with
mostly passable and occasionally exceptional results ;-)
