If your trip also includs Las Vegas and LA area, you may stay in both places. Basically, there is not a lot to see if you drive from Grand Canyon to SFO via I-40 Bastow, then HYW58 bypass Bakersfield, finally I-5 etc. If you drive this route, you can stay in some motels near the I-5 & HWY58 junction. There are lot of other motels along I-5.
If you stop over at Las Vegas, you need to drive a little bit extra north(I-40 then US95. Then from Las Vegas to SFO follows I-15,HYW58,I-5 etc. Fastest travel time LAS to SFO: about 10 hours
If you want also visit LA,after LAS, then you can drive US101 from LA to SFO. You really can stop over at Santa Babara, Pismo Beach, even Hearst Castle, Monterey, via HWY 1, if you have time. If you don't plan to stop at any of those places, the drive time from LA to SFO via
I-5 is about 7 hours,or 9 hours via US101
