I don't know about hog, but for cow, it is killed by a steel pin about 1 ft long, stiking out by pneumatic power, and intruding into the head of the cow on the forehead, the cow collaps to ground in seconds.
The blood is then drained and collected for further treatment. Currently it is still allowed to use to blood (often dried or by rendering)to produce animal feed product. But there is a debate of banning it because of the mad cow disease.
